Brioche and Omelet

    Prepare the Omelet

    In a bowl, whisk together the eggs, salt, and pepper until well combined.

    Cook the Omelet

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour in the egg mixture and let it cook for 1-2 minutes until the edges start to set. Using a spatula, gently lift the edges and let the uncooked eggs flow underneath. Once mostly set, add the ham and gouda cheese on one half of the omelet.

    Fold and Serve

    Carefully fold the omelet in half and cook for another minute until the cheese is melted. Remove from skillet and set aside.

    Toast the Brioche

    In the same skillet, melt the remaining tablespoon of butter and toast the brioche buns until golden brown on both sides.

    Assemble the Dish

    Place the omelet on the bottom half of the toasted brioche bun, then cover with the top half. Serve with a side salad.
