Waffle Preparation

Prepare the Yeast Mixture
In a small bowl, dissolve the yeast in warm milk and let it sit for about 5 minutes until foamy.

Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Pour the wet ingredients and the yeast mixture into the dry ingredients. Stir until just combined. Let the batter rest for 30 minutes.

In a small bowl, sprinkle gelatin over cold water and let it bloom for about 5 minutes.

Dissolve Gelatin
Add the bloomed gelatin to the hot milk mixture and stir until dissolved.

Whip Cream
In a separate bowl, whip the heavy cream to soft peaks and gently fold it into the milk mixture.

Cover and refrigerate the Bavarian cream for at least 4 hours or until set.
