Prepare the Bacon Jam
In a skillet, cook the bacon over medium heat until crispy. Remove bacon and drain on paper towels. Leave about 2 tablespoons of bacon fat in the skillet, add chopped onions and cook until caramelized. Add brown sugar, apple cider vinegar, and the crispy bacon back to the skillet. Stir and let simmer for about 10 minutes until thick. Set aside.

Form the Patties
In a bowl, combine ground beef with salt and black pepper. Form into two patties, slightly larger than the buns.

Assemble the Burgers
Toast the brioche buns lightly. On the bottom bun, layer lettuce, followed by the cheesy patty, a generous spoonful of bacon jam, and slices of tomato. Top with the other half of the bun.

Serve the burgers warm with your favorite sides.
