    Prepare the Home Fries or Hash Browns

    In a skillet, heat olive oil over medium heat. Add the home fries or hash browns, season with salt and pepper, and cook until golden brown and crispy, about 10-15 minutes. Set aside.

    Poach the Eggs

    In a large pot, bring water to a gentle simmer and add vinegar. Crack the eggs into small bowls. Create a gentle whirlpool in the water and carefully slide the eggs in one by one. Poach for about 3-4 minutes, until the whites are set but yolks are still runny. Remove with a slotted spoon and drain on paper towels.

    Prepare the Avocado

    While the eggs are poaching, cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash lightly with a fork and season with salt and pepper to taste.

    Toast the Bread

    Toast the croissants, toast, bagels, or English muffins according to your preference.

    On each plate, place a toasted bread of choice, spread a generous layer of mashed avocado, top with poached eggs, and drizzle with hollandaise sauce. Serve alongside home fries or hash browns and a side salad.
