Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

  3. 3

    Incorporate Wet Ingredients

In another bowl, mix together the shredded carrots, applesauce, vanilla extract, and plant-based milk.

  4. 4

    Combine Mixtures

Pour the wet mixture into the dry ingredients and stir until just combined; do not overmix.

  5. 5

    Bake the Cake

Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  6. 6

    Cool the Cake

Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Cashew Cream Cheese Frosting Preparation

  1. 7

    Soak Cashews

Soak the raw cashews in water for at least 4 hours, or overnight for best results. Drain and rinse before use.

  2. 8

    Blend Ingredients

In a food processor, combine the soaked cashews, lemon juice, maple syrup, vanilla extract, and water. Blend until smooth and creamy.

  3. 9

    Chill the Frosting

Transfer the cashew cream cheese frosting to a bowl and chill in the refrigerator for at least 30 minutes.

Sesame Dukkah Brittle Preparation

  1. 10

    Toast Nuts and Seeds

In a dry skillet over medium heat, toast the sesame seeds and hazelnuts until golden and fragrant, about 5 minutes. Let them cool.

  2. 11

    Prepare Brittle Mixture

In a saucepan, combine the brown sugar, water, and salt. Cook over medium heat until the sugar has dissolved.

  3. 12

    Add Nuts and Seeds

Stir in the toasted sesame seeds and hazelnuts into the sugar mixture and pour it onto a parchment-lined baking sheet.

  4. 13

    Cool and Break

Allow the brittle to cool completely before breaking it into pieces.

Assembly

  1. 14

    Frost the Cake

Once the cake is completely cool, spread the cashew cream cheese frosting evenly on top.

  2. 15

    Top with Brittle

Sprinkle the sesame dukkah brittle pieces over the frosting.

  3. 16

    Serve with Pineapple

Serve each slice of cake topped with fresh diced pineapple for a refreshing touch.
