Cake Preparation

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

In a large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

Pour the wet mixture into the dry ingredients and stir until just combined; do not overmix.

Soak the raw cashews in water for at least 4 hours, or overnight for best results. Drain and rinse before use.

In a food processor, combine the soaked cashews, lemon juice, maple syrup, vanilla extract, and water. Blend until smooth and creamy.

Transfer the cashew cream cheese frosting to a bowl and chill in the refrigerator for at least 30 minutes.
Sesame Dukkah Brittle Preparation

In a dry skillet over medium heat, toast the sesame seeds and hazelnuts until golden and fragrant, about 5 minutes. Let them cool.

In a saucepan, combine the brown sugar, water, and salt. Cook over medium heat until the sugar has dissolved.
