Hummus Base Preparation

    Roasting Sweet Potatoes

    Preheat your oven to 400°F (200°C). Peel and chop the sweet potatoes into small cubes. Spread them out on a baking sheet, drizzle with olive oil, and sprinkle with salt. Roast for 25-30 minutes, or until tender and slightly caramelized. Allow to cool slightly.

    Blending Hummus

    In a food processor, combine the roasted sweet potatoes, tahini, garlic cloves, lemon juice, olive oil, salt, ground cumin, and black pepper. Blend until smooth and creamy. If the mixture is too thick, you can add a little water or more olive oil to reach the desired consistency.

    Making Brown Butter

    In a small saucepan, melt the unsalted butter over medium heat. Continue to cook, stirring frequently, until the butter turns golden brown and has a nutty aroma, about 3-5 minutes. Remove from heat and set aside.

    In a dry skillet over medium heat, add the pecans and toast for about 5-7 minutes, stirring frequently, until they are fragrant and golden brown. Remove from heat and chop coarsely.

    Spoon the hummus into a serving bowl. Drizzle the brown butter over the top, then sprinkle with the toasted pecans and dukkah. Serve with pita bread, crackers, or fresh veggies.
