Method

Preparation

  1. 1

    Prepare the Chickpeas

Drain and rinse the canned chickpeas under cold water. Set aside.

  2. 2

    Prepare the Garlic

Peel the garlic cloves and set aside.

  3. 3

    Prepare the Preserved Lemon

Carefully remove the rind from the preserved lemon, discarding the seeds and pulp. Chop the rind into small pieces.

Blending

  1. 4

    Combine Ingredients

In a food processor, combine the drained chickpeas, tahini, garlic, chopped preserved lemon rind, Aleppo pepper, Urfa pepper, olive oil, fresh lemon juice, and salt.

  2. 5

    Blend the Mixture

Blend the mixture on high until smooth. If the hummus is too thick, add water one tablespoon at a time until desired consistency is reached.

Serve

  1. 6

    Transfer and Garnish

Transfer the smoky garlic hummus to a serving bowl. Drizzle with additional olive oil and sprinkle with a pinch of Aleppo and Urfa pepper for garnish.

  2. 7

    Enjoy

Serve with pita chips, fresh vegetables, or as a spread on sandwiches.
