Labneh Base

Method

Prepare the Labneh

    Strain the Yogurt

    In a fine mesh strainer or cheesecloth, place the plain Greek yogurt. Sprinkle salt over the yogurt. Allow it to drain in the refrigerator for at least 12 hours to achieve a thick labneh consistency.

    Mix in Smoked Cheddar

    Once the yogurt has drained, transfer it to a mixing bowl. Stir in the shredded smoked cheddar cheese and olive oil until well combined.

Prepare the Vegetable Topping

    Caramelize the Cipollini Onions

    In a skillet over medium heat, add a drizzle of olive oil. Add the cipollini onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes.

    Combine Toppings

    In a separate bowl, combine the diced piquillo peppers, caramelized cipollini onions, diced pimento, and chopped parsley. Mix well.

    Spread the smoked cheddar labneh on a serving platter. Top generously with the vegetable mixture. Drizzle with additional olive oil if desired.
