Preparing the Shawarma-Spiced Skirt Steak

    Season the Steak

    In a small bowl, mix together the ground cumin, coriander, paprika, cinnamon, turmeric, garlic powder, salt, and black pepper. Rub the spice mixture all over the skirt steak, ensuring it is evenly coated.

    Drizzle olive oil over the seasoned steak. Allow the steak to marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for more flavor.

    Cook the Steak

    Heat a grill or skillet over medium-high heat. Cook the skirt steak for about 3-4 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing against the grain.

Preparing the Frites

    Peel the russet potatoes and cut them into thin strips to form frites. Pat them dry with a paper towel to remove excess moisture.
