Steak Preparation

Marinate
Allow the steak to marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

Cut the Potatoes
Peel the potatoes and cut them into thin strips, about 1/4 inch thick.

Heat the Oil
In a large pot, heat vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the potato strips in batches to the hot oil. Fry until golden brown and crispy, about 5-7 minutes. Use a slotted spoon to remove them and let them drain on paper towels. Season with salt while they are hot.
Za'atar Feta Topping Preparation

Mix the Topping
In a bowl, combine crumbled feta cheese, za'atar, olive oil, and lemon juice. Mix well until combined.
Berbere Red Wine Jus Preparation

Prepare the Jus
In a small saucepan over medium heat, combine red wine, beef broth, and berbere spice. Bring to a simmer and reduce by half (about 10-15 minutes).

Remove from heat and whisk in butter. Season with salt to taste.
