Preparing the Chimichurri

Make the Chimichurri
In a medium bowl, combine the chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, salt, and red pepper flakes. Mix well and set aside for at least 30 minutes to let the flavors meld.
Preparing the Couscous

Cook the Couscous
In a saucepan, bring the vegetable broth (or water), turmeric, and salt to a boil. Stir in the couscous and olive oil, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.
Preparing the Halibut

Preheat and Prepare
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Bake the Halibut
Place the halibut fillets on the prepared baking sheet, crust side up. Bake for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.
Serving the Dish

Plate the Dish
On each plate, serve a generous scoop of turmeric couscous, top with a pistachio crusted halibut fillet, and drizzle with chimichurri. Garnish with sliced green olives.
