Melon Base Preparation

    Prepare the Vegetables

    Wash and peel the cucumber, then chop it into small cubes. Chop the celery into small pieces. Remove the seeds from the jalapeño and finely chop it.

    Combine Ingredients

    In a large mixing bowl, combine the chopped cucumber, celery, jalapeño, Thai basil leaves, and lemon juice. Toss well to mix all the ingredients evenly.

Granita Preparation

    Make Sugar Syrup

    In a saucepan, combine water and sugar. Bring to a boil over medium heat, stirring until the sugar is completely dissolved. Remove from heat and let it cool.

    Add Lemon Zest

    Once the sugar syrup is cool, stir in the lemon zest. This will add a refreshing citrus flavor to the granita.

    Freeze the Granita

    Pour the sugar syrup into a shallow dish and place it in the freezer. After 30 minutes, use a fork to scrape the mixture, breaking up any ice crystals. Repeat this process every 30 minutes for about 2-3 hours, or until the granita is fluffy and fully frozen.

Assembly

    Once the granita is ready, scoop it into serving bowls. Top with the prepared melon base mixture. Garnish with additional Thai basil leaves if desired.
