    Marinate the Chicken

    In a bowl, combine olive oil, salt, black pepper, garlic powder, and paprika. Add the heirloom chicken thighs to the bowl and coat evenly with the marinade. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

    Prep the Vegetables

    While the chicken is marinating, slice the piquillo peppers and set aside. Peel the cipollini onions and slice them thinly.

    Sear the Chicken

    Heat a large skillet over medium-high heat. Add the marinated chicken thighs (discard any leftover marinade) and sear for about 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add the cipollini onions and sauté for about 3-4 minutes until they start to soften. Add the sliced piquillo peppers and cook for another 2 minutes.

    Prepare the Sauce

    Sprinkle the morita chili powder over the vegetables. Pour in the chicken stock, stirring to combine. Bring the mixture to a simmer.

    Combine and Finish Cooking

    Return the seared chicken thighs to the skillet, nestling them into the sauce. Cover and let simmer for about 15-20 minutes, or until the chicken is cooked through and tender. Stir in the butter and fresh cilantro just before serving.
