Marinade Preparation

Prepare the Marinade
In a medium bowl, combine plain yogurt, minced garlic, lemon juice, ground cumin, salt, black pepper, and olive oil. Mix well until smooth.

Marinate the Chicken
Add the cubed chicken breast to the marinade. Ensure all pieces are coated evenly. Cover and refrigerate for at least 30 minutes or up to 2 hours for better flavor.
Kebab Assembly

Prepare Skewers
If using wooden skewers, soak them in water for 30 minutes to prevent burning. If using metal skewers, they're ready to use.

Thread marinated chicken and sweet bell pepper chunks alternately onto the skewers.

Preheat your grill to medium-high heat.

In a saucepan, combine basmati rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes.

In a food processor, combine fresh cilantro, parsley, chopped green chili peppers, garlic, ground cumin, olive oil, and salt. Blend until smooth. Adjust seasoning to taste.
