Preparation of Branzino

Clean the Fish
Rinse the branzino under cold water and pat dry with paper towels. Make sure the fish is scaled and gutted.

Marinate the Fish
In a small bowl, mix olive oil, salt, black pepper, and Aleppo pepper. Rub this mixture all over the branzino, including the cavity. Set aside to marinate for 15 minutes.
Roasting Tomatoes

Prepare Tomatoes
Preheat the oven to 400°F (200°C). In a baking dish, toss cherry tomatoes with olive oil, salt, and black pepper.

Roast Tomatoes
Roast the tomatoes in the preheated oven for about 20 minutes, or until they are blistered and tender.
Making Sweet Corn Purée

Cook Corn
In a saucepan over medium heat, combine sweet corn kernels, heavy cream, salt, and black pepper. Cook for about 10 minutes, stirring occasionally, until the corn is tender.

Purée the Mixture
Transfer the corn mixture to a blender and blend until smooth. Adjust seasoning if needed.
Grilling the Branzino

Preheat your grill to medium-high heat.

Plate the Dish
On a serving plate, spread a generous amount of sweet corn purée. Place the grilled branzino on top and garnish with roasted tomatoes.
