Beef Short Ribs

Seasoning the Ribs
Pat the beef short ribs dry with paper towels. Season them generously with salt and black pepper on all sides.

Searing the Ribs
In a large Dutch oven, heat olive oil over medium-high heat. Once hot, add the short ribs and sear until browned on all sides, about 3-4 minutes per side. Remove the ribs and set aside.

Adding Liquid and Herbs
Return the short ribs to the pot, followed by the beef broth, thyme, and bay leaf. Bring to a simmer.

Braising
Cover the pot and transfer to a preheated oven at 325°F (160°C). Braise for about 2.5 to 3 hours or until the meat is tender and falling off the bone.

Resting
Remove the pot from the oven and let the ribs rest for at least 15 minutes before serving.

Simmering
Reduce heat to low and continue to cook the polenta, stirring often, for about 20-25 minutes until thickened.

Stir in the grated Parmesan cheese, butter, salt, and black pepper until smooth and creamy. Adjust seasoning as needed.
Tamarind Pomegranate Date Glaze

Combining Ingredients
In a small saucepan, combine tamarind paste, pomegranate juice, chopped dates, honey, and a pinch of salt.

Cooking the Glaze
Bring the mixture to a simmer over medium heat. Cook for about 10-15 minutes, stirring occasionally, until the sauce thickens slightly.
