Kebab Preparation

    Prepare the Marinade

    In a bowl, combine olive oil, minced garlic, cumin, paprika, salt, and black pepper to create a marinade.

    Marinate the Beef

    Cut the beef tenderloin into 1-inch cubes and add them to the marinade. Mix well to ensure all pieces are coated. Cover and refrigerate for at least 30 minutes.

    Prepare Vegetables

    While the beef is marinating, cut the bell peppers into 1-inch pieces and peel the cippolini onions if not already done.

    Assemble Skewers

    Thread the marinated beef, bell peppers, and cippolini onions onto skewers, alternating between the beef and vegetables.

Cooking

    Preheat Grill

    Preheat your grill or grill pan over medium-high heat.

    Grill the Kebabs

    Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the beef is cooked to your desired doneness.

Rice Preparation

    Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

    In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for another 5 minutes.

    Blend Zhoug Ingredients

    In a food processor, combine cilantro, parsley, green chili peppers, garlic, cumin, lemon juice, olive oil, and salt. Blend until smooth. Adjust seasoning as needed.
