Cake Preparation

Preheat and Prepare
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Cream Butter and Sugar
In another bowl, cream the butter until smooth. Gradually add the granulated sugar and beat until light and fluffy.

Add Eggs and Vanilla
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Wet and Dry
Gradually add the dry ingredients to the butter mixture, alternating with buttermilk. Mix until just combined.

Add Bananas
Mash the ripe bananas and fold them gently into the cake batter.

Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

Make the Crumble
In a food processor, pulse the vanilla wafers into fine crumbs. In a bowl, combine the crumbs with melted butter, brown sugar, and salt until the mixture is crumbly.

Spread the crumble mixture onto a baking sheet and bake at 350°F (175°C) for 10-15 minutes until golden brown. Let it cool.
Chocolate Feuilletine Preparation

Melt the Chocolate
In a heatproof bowl over simmering water, melt the chocolate until smooth.

Combine with Feuilletine
Once melted, remove from heat and fold in the feuilletine until fully combined.

Spread the chocolate feuilletine mixture onto a baking sheet lined with parchment paper and let it cool until set.
Assembly

Layer the Cake
Once the cakes have cooled, place one layer on a serving plate. Spread a layer of vanilla wafer crumble on top.

Place the second cake layer on top and repeat the process with more crumble.

Finish by sprinkling the chocolate feuilletine over the top of the cake.
