Marinate Chicken
In a large bowl, combine chicken thighs and buttermilk. Cover and refrigerate for at least 2 hours or overnight.

Prepare the Coating
In another bowl, mix flour, cornstarch, baking powder, salt, and black pepper.

Heat Oil
In a deep skillet or fryer, heat vegetable oil to 350°F (175°C).

Coat Chicken
Remove chicken from buttermilk, allowing excess to drip off. Dredge in the flour mixture until well coated.

Fry Chicken
Carefully place coated chicken thighs in hot oil. Fry for 5-7 minutes on each side until golden brown and cooked through. Remove and let drain on paper towels.

Cook Bacon
In a separate pan, cook bacon until crispy. Drain on paper towels.

Make Honey Glaze
In a small saucepan, heat honey over low heat until warm. Remove from heat.

Assemble Sandwiches
On brioche buns, layer fried chicken, bacon, cheddar cheese, lettuce, and sliced tomato. Drizzle warm honey over the top and close the bun.
