Prepare the Collard Greens
In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened. Add collard greens and chicken broth. Simmer for about 30 minutes until greens are tender.

Prepare the Catfish
In a shallow bowl, mix cornmeal, flour, cayenne pepper, salt, and black pepper. Dip each catfish fillet into buttermilk, allowing excess to drip off, then dredge in the cornmeal mixture.

Fry the Catfish
In a large skillet, heat vegetable oil over medium-high heat. Fry the coated catfish fillets for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

Serve
Slice the jalapeno cheddar cornbread and place a piece on each plate. Top with the crispy catfish and drizzle with chipotle ranch dressing. Serve collard greens on the side.
