Prepare the Dressing
In a bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, minced garlic, smoked paprika, freshly ground peppercorns, and salt until well combined. Adjust seasoning to taste, then set aside.

Char the Romaine
Preheat a grill or grill pan over medium-high heat. Cut the romaine heads in half lengthwise and brush the cut sides with a little olive oil. Place them cut-side down on the grill and cook for about 2-3 minutes until charred and slightly wilted. Remove from heat and let cool slightly.

Assemble the Salad
On a serving platter, place the charred romaine halves. Drizzle with the smoky peppercorn Caesar dressing, then top with herbed croutons and shaved Parmesan cheese.
