Clean the Calamari
Rinse the calamari under cold water and remove the insides, including the ink sac and cartilage. Cut the squid into rings or strips as desired.

Marinate
In a bowl, combine soy sauce, rice vinegar, salt, black pepper, garlic powder, paprika, and red chili flakes. Add the calamari and mix well to ensure it's fully coated. Cover and let marinate in the refrigerator for at least 1 hour.

Drying Process
Preheat your dehydrator to 135°F (57°C). Spread the marinated calamari on the dehydrator trays in a single layer. Dehydrate for about 6-8 hours, or until the calamari is completely dry and brittle.

Storage
Once dried, let the calamari cool completely before placing them in an airtight container. Store in a cool, dry place.
