Make the Black Garlic Marmalade
In a small saucepan, combine black garlic cloves and 1/4 cup of water. Cook over low heat until softened and caramelized, about 10 minutes. Mash with a fork to create a marmalade consistency. Set aside.

Prepare the Herb Crumble
In a small bowl, mix together chopped parsley, thyme, grated Parmesan, salt, and black pepper. Set aside.

Make the Wontons
On a clean surface, lay out a wonton wrapper. Place a piece of escargot in the center, followed by a teaspoon of black garlic marmalade. Moisten the edges of the wrapper with water, fold diagonally to form a triangle, and press to seal. Repeat until all wrappers are filled.

Cook the Wontons
In a large skillet, melt the butter over medium heat until it begins to brown, about 5-7 minutes. Add the wontons in batches and cook until golden brown and crispy on both sides, about 3-4 minutes per side.

Serve
Remove the wontons from the skillet and drain on paper towels. Sprinkle the herb crumble on top before serving.
