    Prepare the Scallops

    Preheat your oven to 400°F (200°C). Rinse the diver scallops under cold water and pat them dry with paper towels. Season with salt and black pepper.

    Prepare the Spinach

    In a skillet, heat olive oil over medium heat. Add the arrowhead spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper, then remove from heat and let cool.

    Prepare the Puff Pastry

    Roll out the puff pastry on a lightly floured surface to about 1/8-inch thickness. Cut the pastry into squares large enough to wrap each scallop.

    Assemble the Dish

    Place a spoonful of sautéed spinach on each pastry square, followed by a scallop. Slice the black truffle thinly and place a slice on top of each scallop. Fold the pastry over the scallops and pinch to seal. Brush the tops with egg wash.

    Bake the Scallops

    Place the assembled pastry parcels on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15-20 minutes, until the pastry is golden brown and flaky.

    Serve

    While the scallops bake, heat the veal jus in a saucepan over low heat. Once the pastries are done baking, serve them warm drizzled with veal jus.
