Prepare the Cauliflower
Preheat your oven to 425°F (220°C). Remove the leaves from the cauliflower and cut it into thick slices, about 1-inch thick, to create 'steaks'.

Season and Roast
Drizzle the cauliflower steaks with olive oil and season with salt and black pepper. Place them on a baking sheet lined with parchment paper and roast in the preheated oven for 25-30 minutes, flipping halfway through, until golden and tender.

Sauté the Mushrooms
While the cauliflower is roasting, heat a tablespoon of olive oil in a skillet over medium heat. Add the maitake mushrooms and sauté until they are golden brown and tender, about 5-7 minutes.

Prepare the Sauce
In a small saucepan, gently heat the yellow tomato pomodoro sauce until warmed through. Squeeze the juice of half the lemon into the sauce and stir.

Assemble the Dish
Once the cauliflower steaks are done, place them on plates. Top with sautéed maitake mushrooms, drizzle with yellow tomato pomodoro sauce, and garnish with pickled spring vegetables. Finish with a squeeze of the remaining lemon juice.
