Filling and Crust

Method

Preparation and Baking

  1. 1

    Prepare the Cherry Filling

In a large mixing bowl, combine the fresh cherries, granulated sugar, flour, lemon juice, cinnamon, and a pinch of salt. Toss until the cherries are evenly coated. Let this mixture sit for about 15 minutes to allow the juices to release.

  2. 2

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  3. 3

    Assemble the Pie

Roll out the pie crust and fit it into a 9-inch pie dish. Pour the cherry filling into the crust, and dot with pieces of butter. Cover the filling with the top crust, crimping the edges to seal. Cut slits in the top crust to allow steam to escape.

  4. 4

    Apply Egg Wash

Brush the top crust with the beaten egg for a golden finish.

  5. 5

    Bake the Pie

Bake in the preheated oven for 15 minutes. Then, reduce the temperature to 350°F (175°C) and continue baking for an additional 30-35 minutes, or until the crust is golden brown and the filling is bubbly.

  6. 6

    Cool and Serve

Remove the pie from the oven and let it cool on a wire rack for at least 1 hour before slicing. Serve warm or at room temperature.
