Bring to room temperature & season
Remove wet-aged ribeyes from refrigerator and pat dry with paper towels. Let rest at room temperature for 30–45 minutes while preparing other components. Combine kosher salt, black pepper, espresso powder, and garlic powder in a small bowl. Lightly brush both sides of steaks with neutral oil, then evenly press the espresso-spice blend onto both sides of each steak so a thin crust forms.

Preheat grill and sear
Preheat a gas or charcoal grill to high heat (500–550°F / 260–290°C). If using a skillet, preheat a heavy cast-iron pan until smoking. Oil the grill grates or pan lightly. Place steaks on the hottest part and sear for 3–4 minutes without moving to develop a deep crust. Flip and sear the other side 3–4 minutes for medium-rare final target (internal 125–130°F / 51–54°C). Adjust time +/- for thickness and desired doneness.

Finish with butter and aromatics
When steaks are near desired temperature (5–10°F below target), add unsalted butter, thyme sprigs, and crushed garlic to the pan (or in a heatproof dish on the grill). If using a skillet, tilt the pan and spoon the melted butter over the steaks (basting) for 30–60 seconds. This adds gloss and flavor to the espresso crust.

Rest
Transfer steaks to a warm plate, tent loosely with foil, and rest for 8–10 minutes. This allows internal juices to redistribute before slicing.
Roasted Fingerling Potatoes

Preheat oven to 425°F (220°C). Halve larger fingerlings lengthwise so pieces are uniform size. Toss potatoes with olive oil, chopped rosemary, sea salt, and black pepper until well coated. Spread in a single layer on a rimmed baking sheet.

Sautéed Asparagus

Trim woody ends from asparagus. Heat a large skillet over medium-high heat and add olive oil and butter. When butter foams, add asparagus in a single layer. Season with sea salt and black pepper.

Sauté, tossing occasionally, for 4–6 minutes until bright green and just tender-crisp. In the last 30 seconds add lemon zest and lemon juice, toss to coat, then remove from heat to avoid overcooking. Keep warm.
Herbed Demi-Glace

In a small saucepan over medium heat, add a teaspoon of butter and sauté the minced shallot until softened and translucent, about 1–2 minutes (do not brown).

Add the dry red wine or port and reduce by half over medium heat to concentrate flavor, about 2–3 minutes.

Pour in the beef demi-glace and add chopped thyme and parsley. Bring to a gentle simmer and reduce slightly, about 3–5 minutes, until sauce coats the back of a spoon. Season with cracked black pepper to taste.

Remove from heat and swirl in the cold unsalted butter to mount the sauce, whisking until glossy and slightly thickened. Keep warm; reheat gently if necessary.
Finishing & Plating

Slice the rested ribeye against the grain into 1/4–1/2-inch slices. Fan slices over warm plates alongside roasted fingerling potatoes and sautéed asparagus.
