Method
Rack of Lamb
Bring to room temperature & season
Remove racks of lamb from refrigerator 45–60 minutes before cooking. Pat dry with paper towels. Rub olive oil over both racks, then evenly season with kosher salt, freshly ground black pepper, minced garlic, and chopped rosemary. Let rest while you prepare other components.
Preheat grill and sear
Preheat grill to high heat (450–500°F / 230–260°C). Oil the grates. Sear the racks, fat side down first, for about 2–3 minutes until well-browned. Rotate and sear the bones side for 1–2 minutes to get color all around.
Finish indirect
Move racks to indirect heat (or reduce burner to medium). Continue grilling with lid closed until internal temperature reaches 125°F (52°C) for medium-rare — about 10–15 more minutes depending on thickness. Use an instant-read thermometer inserted into the thickest part (not touching bone).
Rest and carve
Transfer lamb to a cutting board, tent loosely with foil, and rest for 10 minutes. Slice between the ribs into individual chops or into frenched crown segments as desired. Keep warm while finishing sauces and sides.
Saffron Risotto
Bloom saffron
Place saffron threads in 2 tablespoons hot water; let steep for 5–10 minutes to release color and aroma.
Warm stock
In a small saucepan, keep the chicken or vegetable stock at a gentle simmer and add the saffron infusion to it.
Sauté aromatics and toast rice
In a heavy-bottomed saucepan, heat 2 tablespoons butter and 1 tablespoon olive oil over medium heat. Add the finely diced onion and sweat until translucent, about 4–5 minutes (do not brown). Add the Arborio rice and stir to coat; cook 1–2 minutes until rice edges look translucent.
Deglaze and simmer
Pour in the white wine and stir until mostly evaporated. Begin adding the hot saffron-infused stock one ladle (about 1/2 cup) at a time, stirring frequently. Wait until liquid is mostly absorbed before adding the next ladle. Continue for 18–20 minutes until rice is al dente and texture is creamy.
Finish risotto
Remove from heat, stir in grated Parmesan, remaining tablespoon of butter (if desired), salt and black pepper to taste. Cover and let sit 1–2 minutes, then spoon onto plates immediately to maintain creaminess.
Sautéed Baby Carrots
Cook carrots
In a large skillet over medium heat, melt 1 tablespoon butter with 1 tablespoon olive oil. Add trimmed baby carrots in a single layer. Sauté, stirring occasionally, until carrots are tender and beginning to caramelize, about 8–12 minutes depending on size.
Gremolata
In a small bowl, combine chopped parsley, lemon zest, minced garlic, a teaspoon of olive oil, and a pinch of salt. Mix thoroughly and adjust seasoning. Cover and refrigerate until ready to garnish the lamb.
Mint Yogurt
Whisk together Greek yogurt, chopped fresh mint, lemon juice, salt, and pepper until smooth. Taste and adjust acidity or seasoning. Chill briefly if not serving immediately.
Fig Demi-Glace
Soften figs and reduce shallot
In a small saucepan, melt 1 tablespoon butter over medium heat. Add finely chopped shallot and sauté until translucent, about 2–3 minutes. Add chopped dried figs and red wine; simmer 2–3 minutes to reduce the wine by half.
Finish sauce
Add the beef demi-glace and fresh thyme, bring to a gentle simmer and cook 3–5 minutes until slightly thickened and glossy. Taste and add a small pinch of salt if needed. If sauce is too thick, loosen with 1–2 tablespoons water. Keep warm until plating.
Plating & Finish
Place a scoop of saffron risotto on each plate. Arrange 3–4 slices of grilled lamb over or beside the risotto. Add a small cluster of sautéed baby carrots. Spoon 1–2 tablespoons of fig demi-glace around the lamb and a small spoonful over the carrots if desired. Dot or drizzle mint yogurt on the plate in small quenelles or spoonfuls. Sprinkle a teaspoon of gremolata over the lamb slices for brightness. Finish with a drizzle of extra-virgin olive oil and a microgreen or parsley sprig garnish.
Serve immediately while lamb rests are still warm and risotto is creamy. Provide additional demi-glace and gremolata at the table if desired.
