Mojo Marinade Preparation

Prepare the Marinade
In a blender, combine garlic cloves, fresh orange juice, fresh lime juice, fresh oregano, cumin powder, olive oil, salt, and black pepper. Blend until smooth.

Marinate the Pork
Place the pork shoulder in a large bowl or resealable plastic bag. Pour the mojo marinade over the pork, ensuring it is completely coated. Refrigerate for at least 4 hours, preferably overnight.

Shred the Pork
Remove the pork from the oven and let it rest for about 15 minutes. Shred the pork using two forks, discarding any excess fat.
Sandwich Assembly

Assemble the Sandwich
Slice the Cuban loaf pieces in half. On the bottom half of each loaf, layer the shredded pulled pork, shaved ham, Swiss cheese, pickles, and a smear of yellow mustard.

Grill the Sandwich
Heat a panini press or skillet over medium heat. Place the assembled sandwiches on the press or skillet, and grill until the bread is golden brown and the cheese is melted, about 3-5 minutes.

While the sandwiches are grilling, prepare the fries according to package instructions or make homemade fries. Serve alongside the sandwiches.
