Method

Prepare Salad Base

  1. 1

    Wash and Chop Greens

In a large bowl, rinse the mixed greens under cold water and dry them using a salad spinner. Chop or tear the greens into bite-sized pieces.

  2. 2

    Prepare Vegetables

Halve the cherry tomatoes. Peel and slice the cucumber into thin rounds. Peel and shred the carrots using a grater or a food processor.

Cook Proteins

  1. 3

    Grill Chicken

Season the grilled chicken breast with salt and pepper. Preheat a grill or grill pan over medium-high heat and cook the chicken for about 6-7 minutes on each side or until fully cooked. Let it rest, then slice it into strips.

  2. 4

    Prepare Chickpeas

If using canned chickpeas, drain and rinse them under cold water. If using dried chickpeas, soak and cook them according to package instructions.

Assemble Salad

  1. 5

    Combine Ingredients

In the large bowl with mixed greens, add the cherry tomatoes, cucumber, carrots, sliced grilled chicken, chickpeas, and feta cheese.

  2. 6

    Add Toppings

Slice the avocado and add it to the salad along with olives and sunflower seeds.

Make Dressing

  1. 7

    Mix Dressing Ingredients

In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and black pepper until well combined.

Serve

  1. 8

    Dress and Serve

Pour the dressing over the salad and toss gently to combine all ingredients. Serve immediately.
