Preparation

    Prepare the Broth

    In a saucepan, heat the chicken or vegetable broth and keep it warm over low heat.

    Sauté the Onion and Garlic

    In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the finely chopped onion and sauté for about 5 minutes until it becomes translucent. Add the minced garlic and sauté for another minute until fragrant.

    Toast the Rice

    Add the Arborio rice to the skillet and stir well to coat the grains with the oil and butter. Toast the rice for about 2-3 minutes until it becomes slightly translucent at the edges.

    Deglaze with Wine

    Pour in the white wine and stir continuously until it has mostly evaporated.

    Add Broth Gradually

    Begin adding the warm broth one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding the next ladle. Repeat this process for about 18-20 minutes until the rice is creamy and al dente.

    Add Optional Ingredients

    If using mushrooms or spinach, add them when the rice is about halfway cooked, stirring them in until they are tender.

    Finish with Cheese and Butter

    Once the rice is cooked, remove the skillet from heat. Stir in the grated Parmesan cheese, the remaining tablespoon of butter, salt, and freshly ground black pepper. Mix until creamy and well combined.

    Serve the risotto immediately, garnished with chopped chives if desired.
