Pretzel Bites

Method

Pretzel Bites

  1. 1

    Prepare the Dough

In a large mixing bowl, dissolve the active dry yeast and brown sugar in warm water. Let it sit for about 5 minutes until it becomes frothy.

  2. 2

    Mix the Ingredients

Add the all-purpose flour and salt to the yeast mixture. Stir until the dough starts to come together.

  3. 3

    Knead the Dough

Transfer the dough onto a floured surface and knead for about 5-7 minutes until it's smooth and elastic.

  4. 4

    Let It Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

  5. 5

    Shape the Pretzel Bites

Preheat the oven to 450°F (232°C). Once the dough has risen, punch it down, and roll it into ropes about 1 inch thick. Cut the ropes into 1-inch pieces.

  6. 6

    Boil the Pretzel Bites

In a large pot, bring 10 cups of water to a boil and stir in the baking soda. Boil the pretzel bites in batches for about 30 seconds, then remove them and place them on a baking sheet.

  7. 7

    Bake the Pretzel Bites

Sprinkle coarse sea salt on top of the pretzel bites and bake in the preheated oven for 10-12 minutes or until golden brown.

  8. 8

    Brown the Butter

While the pretzel bites are baking, melt the unsalted butter in a pan over medium heat. Cook until it turns a golden brown color and has a nutty aroma.

  9. 9

    Toss the Pretzel Bites

Once the pretzel bites are done baking, toss them in the browned butter until well coated.

Beer Cheese Sauce

  1. 10

    Combine Ingredients

In a medium saucepan over medium heat, combine the cream cheese and beer. Stir until the cream cheese is melted and well incorporated.

  2. 11

    Add Cheese and Spices

Gradually add the shredded cheddar cheese, garlic powder, onion powder, mustard powder, and black pepper. Stir continuously until the cheese is melted and the sauce is smooth.

  3. 12

    Season to Taste

Taste the sauce and add salt as needed, stirring to combine.
