Pasta and Chicken

Vegetables and Herbs

Method

Cooking the Pasta

  1. 1

    Boil the Pasta

In a large pot of salted boiling water, add the penne pasta and cook according to package instructions until al dente, usually about 8-10 minutes.

  2. 2

    Drain the Pasta

Once cooked, drain the pasta and set aside, reserving a cup of pasta water.

Cooking the Chicken

  1. 3

    Prepare the Chicken

While the pasta is cooking, season the chicken breast with salt and black pepper on both sides.

  2. 4

    Cook the Chicken

In a skillet over medium heat, heat the olive oil. Add the seasoned chicken breast and cook for about 5-7 minutes on each side until golden and fully cooked. Remove from skillet and let rest.

Combining Ingredients

  1. 5

    Sauté Vegetables

In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the halved cherry tomatoes and cook for about 2-3 minutes until they start to soften.

  2. 6

    Add the Arugula

Add the arugula to the skillet, stirring until wilted, about 1-2 minutes.

  3. 7

    Combine Pasta and Chicken

Slice the cooked chicken into strips. Add the drained penne pasta and sliced chicken to the skillet, tossing everything together. If the mixture seems dry, add a bit of reserved pasta water to reach desired consistency.

Finishing Touches

  1. 8

    Add Sauce Ingredients

Stir in the lemon juice, red pepper flakes, and grated Parmesan cheese. Mix well to combine all flavors.

  2. 9

    Serve

Serve hot, garnished with additional Parmesan cheese and a sprinkle of red pepper flakes if desired.
