    Sear the Beef

    In a large skillet, heat the olive oil over medium-high heat. Season the beef chuck roast with salt and black pepper. Once the oil is hot, sear the beef on all sides until browned, about 4-5 minutes per side. Remove from skillet and set aside.

    Sauté Aromatics

    In the same skillet, add the sliced onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent and fragrant.

    Add Broth and Seasoning

    Pour in the beef broth, and add Italian seasoning and red pepper flakes. Stir to combine and bring to a simmer.

    Braise the Beef

    Return the seared beef to the skillet. Cover and reduce the heat to low. Let it simmer for 3-4 hours, or until the beef is tender and easily shreds with a fork. Check occasionally and add more broth if necessary.

Sandwich Assembly

    Prepare the Rolls

    Once the beef is done, remove it from the skillet and shred it using two forks. Set aside. Slice the French rolls in half.

    Assemble the Sandwiches

    On the bottom half of each roll, layer the shredded beef, followed by a slice of provolone cheese. Top with a generous spoonful of spicy giardiniera.

    Serve

    Place the top half of the roll on the sandwich and serve immediately, preferably with a side of beef broth for dipping.
