Method

Preparation

  1. 1

    Prepare the Ingredients

Gather all ingredients and prep them by dicing the carrots, bell pepper, and chopping the green onions.

  2. 2

    Beat the Eggs

In a small bowl, beat the eggs with a pinch of salt and black pepper.

Cooking

  1. 3

    Heat the Oil

In a large skillet or wok, heat the vegetable oil over medium-high heat.

  2. 4

    Cook the Eggs

Add the beaten eggs to the skillet and scramble them until fully cooked. Remove the eggs from the skillet and set aside.

  3. 5

    Stir-fry the Vegetables

In the same skillet, add the diced carrots, peas, and bell pepper. Stir-fry for about 3-4 minutes until the vegetables are tender.

  4. 6

    Add the Rice

Add the cooked rice to the skillet with the vegetables. Stir well to combine and break up any clumps of rice.

  5. 7

    Season the Rice

Pour the soy sauce and sesame oil over the rice mixture. Add the salt and black pepper. Stir everything together and cook for an additional 2-3 minutes.

  6. 8

    Combine with Eggs

Return the scrambled eggs to the skillet, along with the chopped green onions. Mix everything together and cook for another minute until heated through.
