Dough Preparation

Boil Water and Butter
In a medium saucepan, combine 1 cup of water, 2 tablespoons of sugar, 2 tablespoons of unsalted butter, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat, stirring until the butter is fully melted.

Mix Flour
Once the mixture reaches a boil, remove it from heat. Stir in 1 cup of all-purpose flour until the mixture forms a ball and pulls away from the sides of the pan.

Add Eggs
Allow the dough to cool for a few minutes, then add 2 large eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
Frying Churros

Heat Oil
In a deep pot or frying pan, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Pipe Dough
Transfer the dough to a piping bag fitted with a large star tip. Carefully pipe 4 to 6-inch long strips of dough into the hot oil, cutting them with scissors to separate.

Fry Until Golden
Fry the churros for about 2-3 minutes on each side or until they are golden brown. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.
