Method
Preparation
- 1
Prepare the Dates
Preheat your oven to 190°C (375°F). Using a sharp knife, carefully make a lengthwise slit in each Medjool date. Remove the pit and set the dates aside.
- 2
Cook the Chorizo
In a skillet over medium heat, remove the casing from the chorizo sausage and crumble it into the pan. Cook for about 5-7 minutes, stirring occasionally, until the chorizo is browned and cooked through. Remove from heat and allow to cool slightly.
- 3
Mix the Filling
In a bowl, combine the cooked chorizo, cream cheese, and chopped fresh parsley. Mix until well combined.
- 4
Stuff the Dates
Using a small spoon or a piping bag, carefully stuff each date with the chorizo and cream cheese mixture until they are filled.
- 5
Insert Almonds
Press an almond into the top of each stuffed date for added crunch and flavor.
Baking
- 6
Bake the Stuffed Dates
Place the stuffed dates on a baking sheet lined with parchment paper. Bake in the preheated oven for about 10-12 minutes, until the dates are warmed through and the tops are slightly golden.
- 7
Drizzle with Balsamic Glaze
Optional: Once out of the oven, drizzle the baked dates with balsamic glaze and sprinkle with crushed red pepper flakes if desired.
