    Preheat your oven to 190°C (375°F). Using a sharp knife, carefully make a lengthwise slit in each Medjool date. Remove the pit and set the dates aside.

    In a skillet over medium heat, remove the casing from the chorizo sausage and crumble it into the pan. Cook for about 5-7 minutes, stirring occasionally, until the chorizo is browned and cooked through. Remove from heat and allow to cool slightly.

    In a bowl, combine the cooked chorizo, cream cheese, and chopped fresh parsley. Mix until well combined.
