Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Stir gently and let sit for about 5-10 minutes or until foamy.

In a large mixing bowl, combine flour and salt.

Combine Ingredients
Once the yeast is activated, add it along with olive oil to the flour mixture. Mix until a dough begins to form.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour or until it doubles in size.
Assemble Bosco Sticks

Preheat Oven
Preheat your oven to 400°F (200°C).

Prepare the Dough
Once the dough has risen, punch it down and turn it onto a floured surface. Roll it out into a rectangle about 1/4 inch thick.

Add Cheese Filling
Cut the dough into strips (about 1 inch wide). Place a small amount of mozzarella cheese along one side of each strip, then fold the other side over to enclose the cheese.

Shape Bosco Sticks
Pinch the edges to seal and place the Bosco sticks on a baking sheet lined with parchment paper.

Bake in the preheated oven for about 15-20 minutes until they are golden brown.

Add Tomatoes and Seasoning
Add the crushed tomatoes, oregano, salt, and black pepper. Stir to combine.

Let the sauce simmer for about 15-20 minutes. Stir occasionally and adjust seasoning to taste.

Once the sauce has thickened, stir in fresh basil and remove from heat.
