Method

Brining the Chicken

    Prepare the Brine

    In a large pot, combine water, salt, sugar, peppercorns, and bay leaves. Stir until the salt and sugar are dissolved.

    Brine the Chicken

    Submerge the chicken breasts in the brine, cover, and refrigerate for at least 2 hours or overnight for best results.

Cooking the Chicken

    Prepare for Cooking

    Remove the chicken from the brine, pat dry with paper towels. Preheat the grill or heat oil in a skillet over medium heat.

    Breading the Chicken

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each chicken breast in flour, dip it in the egg, and coat it with breadcrumbs.

    Cook the Chicken

    Fry in the skillet until golden brown on both sides or grill for about 6-7 minutes on each side, until fully cooked.

Making the Sauces

Assembling the Sandwich
