    Prepare the Vegetables

    Wash and dry the cherry tomatoes. Slice the cucumber into quarters lengthwise and then cut into bite-sized pieces. Remove the seeds from the bell peppers and cut them into thin strips.

    Prepare the Olives

    If using whole olives, pit and slice them in half. Set aside.

    Prepare the Cheese and Meats

    Drain the mozzarella balls and set aside. Slice the salami and prosciutto into bite-sized pieces, if not pre-sliced. Shave the parmesan cheese using a vegetable peeler.

Assembly

    Combine Ingredients

    In a large serving platter or bowl, arrange the prepared vegetables, olives, mozzarella balls, salami, prosciutto, and shaved parmesan cheese.

    Make the Dressing

    In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, dried oregano, salt, and black pepper to taste.

    Dress the Antipasto

    Drizzle the dressing over the antipasto arrangement just before serving. Toss gently to combine if desired.
