Prepare Noodles

Cook the Noodles
Bring a large pot of salted water to a boil. Add the round noodles and cook according to the package instructions, usually about 5-7 minutes until al dente. Drain and set aside.

Chop the Vegetables
While the noodles are cooking, peel and julienne the carrot. Slice the green onions, separating the white and green parts. Dice the onion and chop the celery into small pieces.
Make the Sauce

Combine Sauce Ingredients
In a small bowl, mix together the soy sauce, sesame oil, minced garlic, grated ginger, cornstarch, water, black pepper, and sugar until well combined. Set aside.
Combine Everything

Stir-Fry
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the white parts of the green onion, onion, carrot, and celery. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

Add Noodles and Sauce
Add the drained noodles to the skillet along with the prepared sauce. Toss everything together and cook for an additional 2-3 minutes until the sauce thickens and coats the noodles evenly.

Finish and Serve
Remove from heat and stir in the green parts of the green onion. Serve hot, garnished with additional green onions if desired.
