Prepare the Potatoes
Wash and peel the Russet potatoes, then cut them into thin strips to form fries.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the fries to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes. Drain on paper towels.

Season the Fries
Immediately toss the hot fries with salt and drizzle with white truffle oil, mixing well.

Add Parmesan
Sprinkle the shaved Parmesan cheese over the fries while they are still hot, allowing it to melt slightly.

Garnish and Serve
Garnish with fresh parsley if desired, and serve hot.
