Prepare the Steak

Season the NY strip steak with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

Make the Aoli

In a small bowl, mix mayonnaise, Sriracha, and minced chipotle peppers. Adjust seasoning to taste.

Prepare the Vegetables

Slice the tomato and wash the lettuce leaves.

Assemble the Sandwich

Once the steak is cooked, let it rest for a few minutes before slicing it thinly against the grain. Cut the ciabatta rolls in half and spread the chipotle mayo on both sides. Layer the sliced steak, provolone cheese, lettuce, and tomato.

Serve

Close the sandwich and serve immediately, optionally with extra Sriracha on the side.
