    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Toss the fingerling potatoes with 1 tablespoon of olive oil, salt, and black pepper. Spread them out on a baking sheet and roast in the oven for about 20-25 minutes, or until golden and tender.

    Cook the Steak

    While the potatoes are roasting, heat a skillet over medium-high heat. Season the NY strip steak with salt and black pepper. Add 1 tablespoon of olive oil to the skillet. Once hot, add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and let it rest for 5 minutes before slicing.

    Scramble the Eggs

    In a bowl, whisk together the eggs, a pinch of salt, and pepper. In the same skillet used for the steak, lower the heat to medium, add butter, and pour in the eggs. Stir gently until the eggs are softly scrambled and cooked through. Remove from heat and add chopped chives on top.

    Plate the steak slices, scrambled eggs, and roasted fingerling potatoes. Enjoy your steak and eggs!
