    Prepare the Steak

    Season the NY Strip Steak with olive oil, salt, and black pepper. Let it marinate for at least 30 minutes.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for 5 minutes before slicing thinly.

    Assemble Flatbreads

    On each piece of flatbread, spread a generous amount of mango BBQ sauce. Layer the sliced steak, provolone, and smoked gouda cheese on top.

    Melt the Cheese

    Place the assembled flatbreads on the grill or in a pan over low heat. Cover with a lid and allow the cheese to melt for about 3-4 minutes.

    Garnish and Serve

    Once the cheese has melted, remove from heat, garnish with fresh cilantro, and slice into pieces to serve.
