    Prepare the Filet Mignon

    Season the filet mignon with salt and black pepper on both sides.

    Sear the Steaks

    In a skillet over medium-high heat, add olive oil. Once hot, add the filet mignon and sear for about 4-5 minutes on each side for medium-rare, or to your desired doneness.

    Rest the Steaks

    Remove the steaks from the skillet and let them rest on a plate, loosely covered with foil.

    Make the Cognac Peppercorn Sauce

    In the same skillet, add the minced shallots and sauté until soft. Carefully pour in the cognac, scraping up any browned bits from the pan. Let it reduce by half.

    Finish the Sauce

    Add the heavy cream, fresh thyme, and green peppercorns to the skillet. Stir and let it simmer until the sauce thickens, about 2-3 minutes.

    Slice the filet mignon and serve drizzled with cognac peppercorn sauce.
