    Prepare the Calamari

    In a large bowl, combine the flour, cornstarch, salt, black pepper, paprika, and cayenne pepper. Mix well.

    Soak in Buttermilk

    Place the calamari rings in another bowl and cover them with buttermilk. Let them soak for at least 30 minutes.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Coat the Calamari

    Remove the calamari from the buttermilk, letting any excess drip off. Dredge the rings in the flour mixture, ensuring they are evenly coated.

    Fry the Calamari

    Carefully place the coated calamari rings in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until they are golden brown and crispy.

    Drain and Serve

    Remove the fried calamari with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Sprinkle with shaved Parmesan and chopped parsley before serving.
