    Prepare the Steak

    Season the NY Strip Steak with salt and black pepper on both sides.

    Sear the Steak

    In a skillet over medium-high heat, add olive oil. Once hot, add the steak and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest on a plate, tented with foil, for about 5 minutes.

    Prepare the Sauce

    In the same skillet, lower the heat and add the butter. Add minced garlic and cook for about 30 seconds until fragrant. Stir in the cognac and scrape the bottom of the skillet to deglaze it.

    Finish the Sauce

    Add the heavy cream and whole peppercorns. Simmer for about 3-4 minutes until the sauce thickens slightly. Adjust seasoning with salt and pepper to taste.

    Serve

    Slice the steak against the grain and serve with cognac peppercorn sauce drizzled on top. Garnish with chopped fresh parsley.
