Burger Assembly

    Prepare the Patties

    In a large bowl, combine the brisket and short rib. Mix well and form into two equal-sized balls, about 8 ounces each.

    Smash the Patties

    Heat a cast-iron skillet or griddle over medium-high heat. Once hot, place the balls of meat onto the skillet and immediately smash each ball down with a spatula to create a thin patty. Cook for about 3-4 minutes until a crust forms.

    Flip and Add Cheese

    Flip the patties and immediately place a slice of American cheese on each patty. Cook for an additional 1-2 minutes until the cheese melts.

    Toast the Buns

    While the patties are cooking, slice the brioche buns in half and toast them on the skillet until golden brown.

    Assemble the Burger

    Spread the malted garlic mayo on the bottom half of each toasted bun. Place the smashed patty with melted cheese on top, followed by 2 tablespoons of onion jam and 2 slices of pickles. Top with the other half of the bun.
