Hot Dog Assembly

Lemon-Parm Fries

Method

Hot Dog Assembly

  1. 1

    Prepare the Hot Dogs

Preheat your grill or stovetop grill pan on medium heat. Grill the Allen Bros. Steakhouse Beef Franks for about 5-7 minutes, turning occasionally, until they are heated through and have grill marks.

  2. 2

    Assemble the Hot Dogs

Place each grilled beef frank in a sport poppyseed roll. Top generously with roasted tomato & shallot jam and add house pickles on the side.

Lemon-Parm Fries

  1. 3

    Prep the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips to resemble fries and place them in a large bowl of cold water. Let soak for 30 minutes to remove excess starch.

  2. 4

    Bake the Fries

Preheat your oven to 425°F (220°C). Drain the soaked potatoes and pat them dry with a kitchen towel. Toss the potatoes in a large bowl with olive oil, salt, and black pepper until well coated. Spread them in a single layer on a baking sheet and bake for 25-30 minutes or until crispy and golden brown.

  3. 5

    Add Lemon and Parmesan

Once the fries are done, remove them from the oven and immediately sprinkle with lemon zest and grated parmesan cheese. Toss to combine and serve hot.
